Ass Kicking Sunday & Veggies
Oh my, what an eventful, tiring and fun weekend!
Since my weekend was so crammed full of …well EVERYTHING, I decided to give a run down of my vegetarian activates for the whole weekend in one shot.
Friday, was comprised of the last of the pasta salad (did I mention I made enough for an army?), boiled peanuts and salad. Dinner was more interesting since I enjoyed it at a Halloween bash(stuffed jalapeno peppers & cheese pizza).
I didn’t realize how difficult it can be to be a vegetarian at a party. Besides having all the wonderful food you cannot eat that contains meat in bountiful amounts, sometimes you don’t even realize something contains meat. So, since most of the appetizers were fried (yummy), I ended up wasting some of the yummy fried tidbits by breaking them open to see if they contained meat. It gave me a new respect for the vegetarian lifestyle.
Saturday was surprisingly easy. I had a late breakfast of a burrito with rice, beans and cheese (no egg for me) with Bud. Since breakfast was so late (around 11) I skipped lunch. Dinner was a nice treat since I had it with a friend! We went to a local Mexican restaurant and I ate the bean nachos…yummy!
Ass Kicking Sunday was… well, kicked my ass! I didn’t fall off the vegetarian wagon, but I did get my ass kicked by biking trails. Bud and I joined a mountain biking group at a local park. As usual, I was bringing up the rear of the pack but hopefully that will change soon!
Sunday’s breakfast was comprised of a Dunkin Donuts croissant with cheese and part of a donut and ya can’t forget the ice coffee. Coffee is IMPARITIVE when you have to get up at 7:30am on a Sunday!
I was ready to eat a car when lunch time arrived since I had already done several miles of trails! Publix veggie subs were the item of the day accompanied by some chips, fruit, and LOTS of liquids!
Dinner was a treat involving a delivered veggie pizza and watching a football game with Bud. To be fair, I didn’t watch the game as much as I napped.
I’ve been amazed that I haven’t craved meat yet. I thought the whole vegetarian thing would be a bit harder, but so far it’s pretty easy. The only thing I’ve been very careful about is where I go out to eat. If there is a particular dish I LOVED at a restaurant that contains meat, I try, either to NOT go to that restaurant or to make sure there is something else on the menu I would like to have.
The bad news is that I have noticed my energy level has been a bit inconsistent. Sunday I was able to do more miles and have more endurance than usual with the bike trails although a bit after, I had a headache and was completely drained. Not so unusual, since Bud and I usually take a nap afterwards, but the headache was a concern. I wasn’t dehydrated or hungry, so I’m not sure what the cause was. I ended up going to be early, hoping it would be gone by morning which it was.
This morning, I sleep more than usual, but that could’ve been from the bike ride the day before.
I’ve also started taking extra b vitamins and an iron supplement. I think that might help with the waning energy levels.

I can't wait to see what you decide at the end of 2 weeks!
I basically do mostly greenwise meat in small quantities with a ample supply of veggies and nuts. It's a nice healthy diet for me. Just a suggestion ;)
